The Challenge
Franchise openings are immovable: marketing, staffing, and inventory all aim at one date. Kitchen equipment specs arrived in waves, with several late substitutions changing circuit requirements mid-rough-in.
Our Approach
We tracked the equipment schedule line by line, roughed in flexible capacity where substitutions were likely, and kept the inspector informed of revisions so nothing stalled at final.
The Result
The restaurant opened on its announced date with every piece of kitchen equipment commissioned and operating.
